HOST Milan 2013 - News from Phoeniks

Phoeniks' team have been visiting HOST 2013 in Milan from 18th to 22nd October. HOST is, according to us, from far the biggest show in the world for our Industry. For us, it is a must.


What have we seen?

MKN new FLEXI COMBI
It was for us THE reason to go to HOST. The long awaited new generation of combi ovens from MKN has been pre-launched during the show. We won't tell you too much about it as we want to leave the Honour to the guys from MKN coming down under by middle of next month to present it officially to the industry. Few hints however: the new FlexiCombi will be available in Australia like everywhere in the world from February next year. The new control panel is inspired by the MKN FlexiChef control panel. A great amount of innovations and features to help managing your cooking process and your kitchen better are available: 2 cooking probes for flexible Rack control, automatic cooking time adaptation according to the load, water consumption reduced by 36% on cleaning cycles... More to come very soon. Definitely the sensation of the show!




CAPIC new CAPITOP

Amazing little unit combining a 30litre tilting mixing kettle and a 30litre brat pan in one unit. CAPIC has developed this appliance with 2 targets in mind: Hospitals and Aged care facilities which instead of using their big brat pans and kettles for special dietary requirements in low volume will be able to use this unit. In addition, every production kitchen willing to develop new menus or try new ideas will welcome this appliance. We have been very impressed by the quality of the finishing and the customer friendly control panel. This unit will be displayed in Australia on PHOENIKS stand during one of the next shows we are exhibiting in.




KISAG new can opener

Unique product developed by KISAG. This small family business from Switzerland is the last add-on in PHOENIKS portfolio. They developed a range of very interesting products which we will display soon (see hereunder). Their brand new can opener is fully stainless 
steel, cut the cans or tins from the side, not from the top and leaves the edges of the can not sharp. See video under. No more O.H.& S. issues. No more staff cutting their fingers or 
hands with sharp tin edges. This product will be available from March 2014. We will show it in one of the next shows we are exhibiting.

Fine Food – a particular trade show for us...


3 years ago we took part for the first time in Fine Food’s trade shows: basically Australia's largest food and hospitality industry event. Fine food usually takes place in Melbourne and Sydney every 2 years even though some regional editions such as “Fine Food Queensland” and “Fine Food Western Australia” do exist.
Fine Food has always had a particular taste for us. This is actually a unique opportunity to meet so many professionals of our beautiful hospitality industry and introduce our new commercial kitchen equipment.

In September 2012 we were proud to bring for the first time the Flexichef newly designed by the German builder MKN. This piece of commercial kitchen equipment will be distributed in Australia from 2013. Parliament House Kitchen and Crown will be the first ones to enjoy such a state-of-the-art, user-friendly, multifunctional piece of catering equipment.

 
Last year we also brought MKN combi ovens and BRUNNER vegetable cutting machines on-site to show you how convenient such catering equipment can be.

The next Fine Food Australia trade show will take place in Sydney Convention and Exhibition Centre from September 9th to 12th. We promise to show you other innovative pieces of catering equipment.

Working in partnership with Advantage Commercial Kitchens, Phoeniks will organize a demonstration of cook-chill catering equipment and techniques on 26, 27 & 28 November 2012. This will take place in Brunswick which is very close to Melbourne. Come and see new catering equipment melbourne!



Phoeniks will indeed show you the latest piece of innovative catering equipment designed by MKN: Flexichef. This multifunctional piece of catering equipment already won innovation awards. Biota Dining - Another MKN Kuchenmeister in Australia

I first met James Viles as he was designing his future commercial kitchen in Signorelli, the new venue of Doltone House in Sydney. Then I had the opportunity to invite him to see an MKN Kuchenmeister on MKN stand during FHA in Singapore. See below:

From there we discussed about the technology and the commercial cooking equipment he wanted in his custom-made cooking suite. After discussions on sizes, shapes, budget, gas or Induction, we achieved to agree on a hand-sketch drawing as follows.

You will notice that at that time, the name of the future restaurant was Botanica. Despite the bad quality drawing above, MKN in good Germans achieved to send a more presentable 3D drawing.
After about 3 months, the Kuchenmeister arrived in Bowral.

1.5 ton of equipment in one piece that we would have to slide into the kitchen. And we did it.







After tilting the Kuchenmeister back on its plinth, James could discover his cooking suite for the first time.


We then, just had to connect the appliance to power and water. Thanks to MKN design, there is only one connection point for power and water in the complete cooking suite.
Since the opening in March, Biota has been acclaimed for its design and of course for James and Shaun Quade's cooking. Biota has been positively mentioned in Sydney Morning Herald as one of the Best Designed Restaurant in New South Wales.

We are very proud to have been part of this project and wish to James and his team all the Best of luck and success for the future.

Gourmet Traveller Review on PM24 - French commercial rotisserie by PHOENIKS

Here is the review on new restaurant opened by Philippe Mouchel, PM24, in this month (March 2011 issue) Gourmet Traveller. Highlight of the commercial kitchen as mentioned is the red enamelled Rotisserie, delivered by Phoeniks and manufactured by Cuisines Design (France).

The Source - Moorilla Estate

I have met Philippe Leban, Excutive Chef of The Source in Moorilla Estate in April last year for the first time. After having discussed about his project, I have drawn a first draft of the custom made Kuchenmeister from MKN
His idea was to have gas burners and gas target tops but we suggested to go for Induction. Here are the 3-D drawings that MKN sent back to us.

After negociations and approval, MKN manufactured the Kuchenmeister and we delivered it on site. We had to deliver in 3 pieces as the commercial kitchen is situated on the first floor of the building and we couldn't get the Kuchenmeister in one piece. We had to crane the pieces on the balcony and then slide them inside the kitchen.




Then Peter, sent from MKN could weld each piece and make the Kuchenmeister one piece cooking island as it was.

We added the hand rail and the shelf


Finally here it is. Please note the Salvis salamander and the GIF ventilated ceiling provided by PHOENIKS as well.
