Biota Dining - Another MKN Kuchenmeister in Australia

I first met James Viles as he was designing his future kitchen in Signorelli, the new venue of Doltone House in Sydney. Then I had the opportunity to invite him to see an MKN Kuchenmeister on MKN stand during FHA in Singapore. See below:

From there we discussed about the technology and the equipment he wanted in his custom-made cooking suite. After discussions on sizes, shapes, budget, gas or Induction, we achieved to agree on a hand-sketch drawing as follows.

You will notice that at that time, the name of the future restaurant was Botanica. Despite the bad quality drawing above, MKN in good Germans achieved to send a more presentable 3D drawing.
After about 3 months, the Kuchenmeister arrived in Bowral.

1.5 ton of equipment in one piece that we would have to slide into the kitchen. And we did it.





After tilting the Kuchenmeister back on its plinth, James could discover his cooking suite for the first time.


We then, just had to connect the appliance to power and water. Thanks to MKN design, there is only one connection point for power and water in the complete cooking suite.
Since the opening in March, Biota has been acclaimed for its design and of course for James and Shaun Quade's cooking. Biota has been positively mentioned in Sydney Morning Herald as one of the Best Designed Restaurant in New South Wales.

We are very proud to have been part of this project and wish to James and his team all the Best of luck and success for the future.

Gourmet Traveller Review on PM24 - French Rotisserie by PHOENIKS

Here is the review on new restaurant open by Philippe Mouchel, PM24, in this month (March 2011 issue) Gourmet Traveller. Highlight of the kitchen as mentioned is the red enamelled Rotisserie, delivered by Phoeniks and manufactured by Cuisines Design (France).

The Source - Moorilla Estate

I have met Philippe Leban, Excutive Chef of The Source in Moorilla Estate in April last year for the first time. After having discussed about his project, I have drawn a first draft of the custom made Kuchenmeister from MKN
His idea was to have gas burners and gas target tops but we suggested to go for Induction. Here are the 3-D drawings that MKN sent back to us.

After negociations and approval, MKN manufactured the Kuchenmeister and we delivered it on site. We had to deliver in 3 pieces as the kitchen is situated on the first floor of the building and we couldn't get the Kuchenmeister in one piece. We had to crane the pieces on the balcony and then slide them inside the kitchen.




Then Peter, sent from MKN could weld each piece and make the Kuchenmeister one piece cooking island as it was.

We added the hand rail and the shelf

Finally here it is. Please note the Salvis salamander and the GIF ventilated ceiling provided by PHOENIKS as well.

ELRO Kettle JRW 2200 and LushDesserts

There are many important steps in the process of creating a great product for manufacture, at lush desserts one of our key components in manufacturing is not just the recipe but the equipment to prepare our production runs.For many chefs there is nothing glamorous about a large 120 litre auto rotating, thermo reversible, digitally controlled, double jacketed steam kettle, but  all  chefs would agree that the most expensive part of cooking is in the ingredients. Having precise and perfect control over hundreds of dollars worth of ingredients that are in each of our production runs is extremely important and cannot be understated.
The recipes that I use for production are developed from scratch in 1 Litre pots, using precise heat ranges and expensive gourmet ingredients, so that when I scale up to the 120 Litre production batches using the ELRO Kettle, I know that it will be a perfect result, I encourage chefs/manufacturers to take a close look at the ELRO kettle and the benefits it will bring to the quality of their product.
Many chefs and production managers will beware that when preparing delicate sauces and crèmes for the retail or food service market, precise temperature control is paramount, not only from a HACCP point of view but also that some ingredients will only work when added at a certain heat stage or correctly hydrolysed.The elro kettle really is in a class of its own.
When our desserts crèmes are ready, we hold at the desired temperature while at the same time the ELRO kettles unique paddle rotates at a set speed while evenly distributing the precise holding heat, we then connect to the well engineered tap at the base of the kettle and fill our retail and food service tubs via a piston filler, sealing straight after filling to ensure product integrity.
On first inspection of the elro kettle you will notice that is as precisely built as a Swiss watch and runs equally well, no surprise here, as it is designed and manufactured in Switzerland and true to Swiss workmanship everything is well engineered .On second inspection you will see there is not much more to think about except where to put it in your kitchen or factory.
